Herb-Mushroom Egg Muffins

I have never big huge on breakfast or breakfast foods, but these super simple and super delicious egg muffins are one of my ‘go-to’ recipes for meal prepping. Especially if you like to have something to be able to ‘grab and go’ then these little egg muffins are the recipe for you!

The best part about them is that you can actually make them however you want to, by adding or replacing your choice of fillings. I love the savory, earthy flavor of mushrooms, so I typically use cremini shrooms and herbs.

Herb-Mushroom Egg Muffins

Ingredients:

  • 2 TBSP butter/oil

  • Shredded potatoes(I use Simply Potatoes found in the breakfast refrigeration section)

  • Salt, pepper, paprika, and garlic powder to taste

  • 1 cup of chopped mushrooms

  • ¼ cup chopped onion

  • 1 TBSP chopped rosemary

  • 6-8 eggs (may vary depending on other fillings)

  • ¼ cup shredded cheese(cheddar, or mexican blend) *optional*

Instructions:

  • Preheat oven to 350

  • Melt butter/oil in a large skillet over medium heat; add shredded potatoes and seasonings to flavor. Let potatoes sizzle and get golden brown, but not too crispy.

  • As potatoes are cooking, chop onions, mushrooms, rosemary(Here is where you can add any veggies, herbs, or proteins you like) Check on the potatoes and remove from heat. 

  • In a large mixing bowl, beat together eggs, mushrooms, rosemary, and cheese*

  • Layer golden sizzled potatoes into the muffin pan(each cup should be filled about 1/4 of the way, just as a base); pour egg mixture over potatoes so that muffin cups are just under the fill mark(eggs will rise and get fluffy, so leave some space)

  • Bake egg muffins for 14-18 minutes or until the egg is cooked through and no longer “jiggly”. You can test this by shaking the muffin tray or poking the middle of an egg cup with a toothpick or knife. 

  • Storage: Keep in an airtight container in the fridge for up to 5 days and/or freeze some in freezer safe baggies.

  • These are great protein packed breakfast cups to throw in the microwave and get started on the day. Enjoy!
