Hearty Chicken Noodle Stew

Soo I’m super excited about this one because it was one of those days that I had plenty of time to plan, prep, and cook a meal at home. What happened? Well, it was the classic getting sucked into the laptop, next thing you know it’s 3:00 and you’ve got somewhere to be 4:00-6:00 with driving.

Don’t panic.

This one is so easy. I honestly have no idea how I made this up; even better, I’m not sure how it came out so good!! I make stuff up and don’t always measure, so have fun with it and remember: In cooking less is more, you can’t take away but you can always add to a recipe ;)

Ingredients:

  • 4-6 chicken breasts

  • Seasonings(estimated so start low and add more to your preference)

    • 1 TBSP of chopped fresh basil or 2 tsp of dried basil

    • 1 tsp salt

    • 1 tsp pepper

    • 1 tsp oregano ( I used dried)

    • 1 tsp of TJ’s* mushroom umami blend

    • 3 garlic cloves minced or crushed

  • diced tomatoes (fresh or canned)

  • 3 celery stalks chopped

  • 1/4 yellow onion diced

  • 1 cup diced or sliced mushrooms(I diced cremini)

  • 6 cups of chicken or vegetable broth

Directions:

  1. Place chicken breasts on bottom of crock pot and pour all seasonings over chicken.

  2. Add diced tomatoes, celery, onion, mushrooms, (any other vegetables).

  3. Pour chicken broth over all ingredients. Wa-la!!

  4. Turn the crock on HIGH for 3 hours or LOW for 6 hours.

  5. Add in egg noodles or pasta of choice and enjoy!!

Options to modify dish:

  • Omit chicken, use veggie broth, and substitute a vegan/GF pasta

  • Omit salt to lower sodium in dish

  • Really in a rush?? Do it in a pot bringing everything to a boil and waiting until chicken is cooked through. If using this method, I like to brown the chicken in the bottom of the pot first, then adding oil and garlic, then remaining ingredients.
