Sweet & creamy Jalapeño Cole-slaw
Pair with BBQ, brisket, grilled chicken, or as a side at your next (socially distanced) cookout.
This one is SUPER EASY so I’m just gonna lay it out there for ya! I had jalapeños on my plant that needed to be used, and wa-la! this delicious cole-slaw came to be.
Ingredients:
2 jalapeños
1 green bell pepper
1 clove of garlic minced
1 TBSP butter
2 TBSP cream cheese
1/4 cup of sour cream
3 TBSP shredded cheddar cheese
2 TBSP agave(or honey)
2 TBSP white vinegar( you can use apple cider vinegar if you prefer)
3-4 cups of cole slaw (shredded cabbage, lettuce, carrots)
salt and pepper
Instructions:
Dice peppers into small pieces after removing seeds.
In a small sauce pan, melt butter and then add diced peppers and minced garlic. Allow peppers to soften and garlic to slightly golden; this will help bring out flavor. Remove from heat and set aside.
In a mixing bowl, add cream cheese, sour cream, cheddar cheese, vinegar and agave. Stir well to create a creamy mixture. Add in coleslaw and stir to incorporate the creamy mixture into slaw.
Add cooked peppers, and salt and pepper into cole-slaw mixture. Stir well and refrigerate. Serve as a side or on top your favorite sandwich, burger, or roll. Enjoy!
