Peppery pico de Gallo

Once again it's super simple and tastes oh so good. This one has been requested by my friend Danielle, as she couldn't stop raving about it when we snacked on it after a walk. The best part is the ingredients are flexible, so you can find your own substitutes!

For my smiley, sunshiney friend here's that bit of spice you like to add to your life! You inspire me with your positivity and persistence to always do better in all aspects of life.

Ingredients:

  • 1/2 onion(your choice, I prefer a yellow or Vidalia, red onion is very strong flavor)

  • 1-2 tomatoes, depending on size and how “juicy” you want it

  • peppers! I use an assortment and it varies.. but typically I pull from my garden

  • 1 Red bell pepper

  • 1 jalepeño pepper

  • 1 big Bertha bell pepper

  • 1 garden salsa pepper

  • 1 lime

  • 1/2 tsp of garlic powder or minced garlic cloves(1)

  • salt and pepper to taste

  • optional cilantro

Directions:

  • Dice onion and tomatoes to your size preference.

  • Remove seeds from peppers, dice to small pieces.

  • Add garlic powder, and salt and pepper to taste

  • Squeeze one whole lime and add optional chopped cilantro

  • Let sit in refrigerator for an hour or more. Store up to one week in airtight container.

  • Enjoy with chips, Italian sausage, tacos, or your other favorites for a flavorful spicy kick!

Use whatever peppers you love, add more spice, let it marinate overnight to soak flavor. Tag me in your pictures of how you enjoy the peppery pico!
