Super simple chicken burritos

TJ's Chicken Burritos

This is seriously the simplest recipe I think I've ever made. 3 ingredients in a crock pot then throw over rice or into a tortilla. I'm sure you can manage that! Especially when Trader Joe’s makes life easy with pre-marinated chicken. If you know the section I'm talking about in Trader Joe’s, you may have an idea of where this recipe is going. Ingredients:

  1. Trader Joe’s Pollo Asado pre-marinated chicken

  2. 1 can of original Rotel tomatoes(juice drained)

  3. 1-2 cans of beans of your choice(I used black beans, drained but not rinsed)

  4. rice OR tortillas

  5. *optional toppings: lettuce, cheese, sour cream, onion, hot sauce*

Directions:

  1. Add chicken, tomatoes, and beans into crock pot.

  2. Cover with lid and cook on high for 4 hours or low for 6 hours

  3. Use forks to pull chicken apart and shred it

  4. Serve over rice or in a tortilla as a burrito

  5. Add Mexican cheese, sour cream, and sauces to your liking!

Super simple. Easy is good. Especially when simple and easy taste so good! Enjoy!
