Bacon Grilled Cheese and Red Roasted Pepper Tomato Soup

Let's make some bacon grilled cheese with a red roasted pepper tomato soup! This recipe is easy to tweak to make it vegetarian, vegan, and dairy free.

To get started, let's make soup.

{Dairy free, Vegan, Vegetarian, Gluten Free, and Soy Free}

INGREDIENTS

✨1 butternut squash

✨5 ripe tomatoes

✨1 red pepper

✨5 cloves of garlic

✨1/2 Vidalia onion

✨1/4 cup olive oil

✨16oz Vegetable broth

✨Coconut cream

✨Salt + pepper

✨Fresh basil

HOW TO

✨Microwave butternut squash for 4 minutes to soften. Meanwhile, preheat oven to 400⁰F

✨Chop tomatoes in half and de-stem

✨Peel and slice onion. Peel garlic cloves.

✨Remove seeds from red pepper and slice

✨Peel butternut squash and dice up

✨Add all chopped/sliced veggies to a pyrex dish(or deep dish with lip)

✨Sprinkle olive oil, salt, pepper, and garlic cloves over vegetables

✨Bake for 30-45 minutes on 400⁰F. Remove from oven and let cool slightly

✨Using an immersion blender, puree all the vegetables in a big pot.

✨Add 16oz of vegetable broth and 1 can of coconut cream. Continue to puree until smooth and creamy

✨Chop fresh basil and add to soup. Top soup with extra fresh basil and enjoy!

Now let's talk about that bacon grilled cheese.

{Substitute the cheddar for Daiya dairy free cheese. Option to leave out bacon too}

INGREDIENTS

✨Bacon

✨Sourdough bread

✨Cheddar cheese

✨Butter ( @countrycrock vegan avocado oil butter)

HOW TO

✨Start cooking bacon in a pan on medium heat with a fork or tongs nearby for flipping the bacon allowing it to get extra crispy(unless you like it floppy)

✨Remove bacon from pan and place on a paper towel lined plate to absorb excess grease

✨Drain excess grease from pan(Tip: pour grease into an empty can and put in the freezer to throw away next time to take the trash out)

✨Add 2 TBSP butter to pan and place one piece of bread down. Then add cheddar cheese, bacon strips, more cheddar cheese, and top with other bread slice

✨Cook on medium-low heat and let each side get golden brown, watching closely(Tip: keep flipping)
