Getting your groceries!

This recipe is as easy as using leftover produce in your fridge or going out and stocking up on all the veggies! I suggest shopping at places like local farmers markets for fresh, healthy produce that comes from somewhere local. If farmers markets aren’t accessible for you I love shopping for cleaner produce at places like, Trader Joe’s, Whole Foods, or Sprouts

Let’s get to cooking!

Get a crock pot!

I use my plug-in crock pot so I can leave it cooking overnight. Plus the added bonus of the entire house smelling good is just amazing!

This soup is warm, cozy, and hearty so it will keep you nice and full. If you’re eating grains, it pairs perfectly with some buttered toast to dip in it or a grilled cheese too! I hope you enjoy it as much as I did!

Ingredients:

  • 2 sweet potatoes diced

  • 4 celery stalks diced

  • ½ Vidalia onion diced 

  • 3 carrots diced (or 1 cup of baby carrots)

  • 1 can of cannellini beans

  • 1 can of garbanzo beans

  • 1 can of diced tomatoes

  • 1 cup of chopped spinach

  • 32 ounces of veggie stock

  • 2 tsp mushroom umami

  • 2 tsp onion salt

  • 1 tsp cracked pepper

  • 1 tsp garlic powder

  • little shake of red pepper flake

How to:

  • Dice up all the veggies and add to crock pot with veggie stock. Add seasonings. Cook for 6-8 hours on low or 4-6 hours on high. 

  • Optional: microwave sweet potatoes for 2 minutes to help soften slightly before dicing 

  • Optional: if you're eating grains - add cooked noodles of your choice 

  • Enjoy!!
